In previous years, according to surveys, articles and general eating habits of consumers in our country, it was predicted that by the year 2050 we were going to double the number of people with obesity on earth. This had an important change, as a result of the pandemic that we are currently going through, one of the things that drove many consumers, is that if you work on having a healthy body, with good nutrition and exercising, it is much less likely that your immune system is lowered and therefore, less probability of having any kind of diseases. Because of this change, food and consumption in stores, restaurants and fast food also had to transform and be part of the wave of good health and nutrition.
The food industry has recently been involved in several growing trends that revolve around sustainability and healthy living. An increasing number of consumers are showing interest in brands that not only provide them with healthy and nutritious foods, but also brands that take health, environmental and ethical concerns seriously in the production of those foods.
The hottest trend is plant-based food preparation. The number of consumers interested in at least replacing part of their meat consumption with plant-based foods, or at least reducing meat consumption in their regular diet, is increasing more and more brands are emerging or innovating to meet the needs of these consumers. Probably the most famous so far are the meat substitute brands Beyond Meat and Impossible Foods. Processed burgers whose main ingredient is plants are currently representing the largest share of the overall plant-based food market. This is a challenge that the industry must address before there is even wider adoption on the subject. This is the relatively high price of plant-based options compared to the meat offerings they are intended to replace.
All these changes, besides being healthier for consumers, have definitely opened up an experimental world for the restaurant industry, with new dishes and fusions with vegetables and legumes, which used to be a little difficult to find but are now becoming more and more common.
